Fragmented Cassava Cake

Ingredients

100 gr butter

25 gr castor sugar

50 gr granulated sugar

250 gr fragmented cassava

1/8 sdt salt

3 eggs, separated

150 gr flour

1 sdt baking powder

100 gr KARA santan cair Murni

Directions

Cream together butter and castor sugar in a mixing bowl until light and fluffy. Add in fragmented cassava 1 tbsp at a time and mix well after each addition. Add egg yolk and mix well.

Shift together flour and baking powder. Add flour mixture to the butter mixture alternately with coconut cream. Set aside..

Whip the egg white in a clean mixing bowl until foamy. Add salt continue whipping until soft peaks form. Gradually add the granulated sugar and keep mixing until egg whites are stiff.

Fold in the egg whites into the flour butter mixture until incorporated.

Spoon the batter into greased and lightly floured pan. Tap the pan a few times to get rid of the air bubbles inside the batter.

Bake in a oven 350 degree Farenheit, about 40 minutes or until the cake is golden brown.

Let cake cool in a pan for a few minutes. Remove cakes from the pan and place on a wire rack.
