Bihun Goreng (Stir Fried Vermicelli)
½ pack Super Bihun, Rice Vermicelli 500 gr
4 ounces chicken breast tenders, sliced
3 tbsp cooking oil
5 chopped shallots
1 green onion, thinly sliced
5 cloves garlic, chopped
75 gr any vegetables such as spinach, cai-sim or cabbage
4 tbs kecap manis tukang sate Kecap Manis Cap Orang Jual Sate, Sweet Soy Sauce
1/3 cup chicken broth
salt and pepper to taste
Put vermicelli in a large bowl and soak in water for about 2 hours. Make sure the vermicelli is covered with water. Drain and set aside. The vermicelli should be soften but still about half done since it will be cooked again when it is stir-fried.
Heat oil over high hear in a frying pan or wok and stir fry the chicken meat until lightly golden, about 2 – 3 minutes. Add the shallotsand stir fry until shallots has soften. Add garlic and stir fry again for about 1 minute. Add cabbage or vegetables and stir fry about 1 minute. Add chicken broth, kecap manis, salt and pepper to taste. Stir in the vermicelli , tossing and mixing thoroughly until very hot and all stock is absorbed. Remove from heat.
Place the stir-fried vermicelli in a plate sprinkled with fried onions. Serve with krupuk udang and pickles (cucumbers).
