Nasi Hainam


3 cups jasmine rice, rinse

2 tbsp sesame oil

2 tbsp cooking oil

5 cloves garlic, finely chopped

5 cm fresh ginger, slice thinly

Salt to taste

Chicken broth as needed to cook rice

1 cornish game hen - clean

Cook the following until salt and water dissolved (brine water)

2 cups water

3 cloves garlic smashed

2 tbsp chopped ginger

5 tbsp salt

3 tbsp sugar


Place the Cornish game hen in a Ziploc bag and pour with the brine water. Let the Cornish hen marinated for about 24 hours. When its ready, take the Cornish game hen out from the plastic bag and discard water.

Preheat oven to 350 degrees F. Place game hen in a ovenproof baking dish and roast for about 1.25 hours.

Heat cooking oil and sesame oil in a medium pan. Add ginger and stir until fragrant. Add garlic and continue to stir for one minute. Stir in jasmine rice and add some salt, continue to cook for about 3 minutes. Turn off heat.

Move rice to the rice cooker. Cook the rice just like cooking regular steam- rice, replacing water with chicken broth.

Serve rice with roasted game hen, sambal badjak and chopped ginger.
